Valli Unite is a jealousy inducing cooperative/commune in the Piemonte.  They produce their own meat, cheese, local food specialties, offer warm hospitality and of course, make lovely wines. As they say “It all comes back to our philosophy: to find and renew the positive aspects of traditional ways of working, rooted in our own locality and culture, which remind us of our duty to respect the balance of nature.”  Sounds pretty good to us.  Il Brut and The Beast is a perfect warm weather spritzer, not quite sparkling, but lively on your tongue, made from cortese, favorita and a splash of moscato.  The demure devil on the front sipping wine says it all for me…
